Chocolate Thyme Cookies...

Hello everyone, hope you enjoyed your Valentine's weekend. I sure did, my sweet Boo surprised me with a trip to the spa, a home cooked meal of lobster and steak, complete with roses and candles set fireside. He's a total dreamboat! 

The weather here has been amazing, sorry to the rest of the country who is suffering from another winter vortex. I promise you if you make these cookies they will warm you right up. The original recipe came up on my Pinterest feed and I was instantly smitten. They were added to the top of "make me right now" list.

This recipe did not disappoint, I'm already considering adding them to the Christmas cookie list; they're kind of a big deal! The thyme adds a slightly earthy undertone to the dark chocolate and sweet brown sugar, I'm totally in love with them.


So soft and delicious...consider making these for your next party or to bring you out of the winter blues.

Chocolate Thyme Cookies

yields about 2 dozen

Preheat oven to 350º F

115 grams Butter, room temp
130 grams Light Brown Sugar
1 Egg, room temp
220 grams All Purpose Flour
1/4 teaspoon Baking Soda
1/4 teaspoon Sea Salt
1/2 teaspoon Baking Powder
100 grams Dark Chocolate, chopped well
1 small sprig of Fresh Thyme, leaves picked
Fleur de Sel for sprinkling tops

Combine flour, baking powder, baking soda, salt, and thyme. Set aside.
Cream butter and brown sugar, scraping bowl.
Add egg and combine.
Add dry ingredients, mix to combine.
Add chocolate and combine thoroughly.

Line sheet pans with foil or parchment.
Scoop dough and flatten tops slightly.
Sprinkle with Fleur de Sel.

Bake for about 10-12 minutes. 

*All ovens vary, Cookies are done when they are set on the sides.

  3. I don't think I've ever had any baked goods with thyme but the combination of it with chocolate sounds pretty amazing (and looks amazing too - your photography is awesome!). Thanks for sharing your great recipe over on Best of the Nest!
