Apple Cinnamon Muffins and planning my fall menus...

I've been wanting to make some muffins for my Boo for some time, he loves muffins and is always buying them at the store. Why I haven't made them for him yet is beyond me. I picked up some local apples at the store the other day and wanted to make a pie, a tart, apple butter, crostada...everything fall related of course.




I cooked down the apples a little bit to give them that soft texture that you would expect from apple pie. I added butter, sugar, cinnamon, and a splash of apple cider. I could have sat there and ate the entire batch of apples before they made their way into the muffins. Who doesn't love apples covered in a gooey caramel with hints of cinnamon? 





There are so many recipes that I want to make and just don't seem to have time to make them all, I'm starting to think that I will cook and bake throughout the night. I'll sleep when I'm dead! 


I do have plans to make some pies, apple sauce, and crostadas to name a few things. And carrying on with the Broke and Bored Installments throughout fall and winter. I have some surprises at the start of the new year and cannot wait to share. Hope you all have some time to get into the kitchen and whip up some of your favorite fall treats. 


Apple Cinnamon Muffins

makes 24 medium sized muffins or 6 jumbo

Apple Filling:
6 Gala, Granny Smith, or Golden Delicious Apples, peeled, cored, and diced
1 teaspoon Cinnamon
2 Tablespoons Sugar
2 Tablespoons Butter
3 Tablespoons Apple Cider or Fresh Lemon Juice

Melt Butter in pan.
Toss diced apples in sugar and cinnamon.
Add Apple Cider or Lemon Juice.
Cook for about 7-8 minutes on medium heat, just until apples are are soft.
Let cool.

Muffin Batter:
1 Pound Butter, softened
600 grams Sugar
6 Eggs, room temperature
533 grams All Purpose Flour
1 Tablespoon Baking Powder
1/2 teaspoon Sea Salt
8 ounces Milk

Cream butter and sugar together until combined.
Add eggs, one at a time and scraping bowl after each addition.
Combine all dry ingredients and sift.
Add flour mixture and milk in THREE alterations.  Starting and ending with dry.
Mix until combine.

Add Cinnamon Apples.

Scoop into paper lined or greased muffin tin. 

Bake at 350ºF for about 12-15 minutes for medium sized muffin pan, or 20-22 for jumbo.

*Each oven is different and cooking times may vary depending on appliance as well as equipment used.
