Citrus Herb Roasted Chicken and Blogging...

My morning usually begins with reading my favorite blogs and today was no exception, except I felt a little discouragement from one. The question she asked, "are you reading blogs less?". I'm still new to the blogging world and I love it, I love to share stories, pictures, recipes, DIY, I love it all. I wish I had more time to write posts, but unfortunately I do not. Everything I've done has been a learning process, from taking an OK picture to writing. I'm not the best but hope to one day be a blogger that is followed, I love sharing with you. To the people that follow me, THANK YOU! I hope that you enjoy what I have to say and are making a good meal or a fun DIY. So I will keep on keeping on, BOOM!

Now onto some good food...

Orange, lemon, garlic, thyme, rosemary, and olive oil; whats not to love? I first came across this recipe on Pinterest, via HERE. I've made it a few times and always go back to it, Liam loves it so much. I love the crispy skin and bright rich flavors. Its a go to recipe and could easily be used for entertaining, freezes well if you have leftovers, and is put together in a snap!

Black Bean Corn Salad and a thinking of Dad...

Happy Monday, everyone! Hope you enjoyed your weekend and had an opportunity to spoil the great dads out there. My dad lives about 1000 miles away from us, so Liam and I sent out cards, pictures, and drawings last week for him. The last time we visited was during fall and we had the chance to go to the apple orchard, it was so fun and Liam still talks about our time spent there with Grandpa. We love and miss you Dad!

Flavor Packed Pasta and dealing with negative opinions...

Hope you all had a great weekend, mine was filled with lots of work and hanging with the Boo. He just moved into his first house, so lots of painting and decorating have been taking place. I love every single minute of it!

If you all recall on Friday I posted a recipe for whole wheat donuts and a short story of Liam and his love for them. Shortly after that was posted I received my first negative comment as a blogger. In short I said that Liam would do anything for a donut, and as a reward for being good during my hair and dentist appointments, he will get a donut. I deleted the comment immediately cause I don't want anything negative on here ever, but after talking to a few people about it they said that I should have left it to see what others have to say. So here is what this person had to say... "this boy has sit through numerous dentist visitsI'm not surprised! If you are feeding him balls of dough smothered in regular sugar - then you are setting yourself up to be your dentists best friend. There has got to be a healthier way to bribe a kid that rot his teeth out of his head.

My child is given sweets, only during special occasions or times when he deserves it for being good. He doesn't even drink juice, soda, or chocolate milk, mostly regular milk or water. He will choose broccoli over potatoes. So to the person that was so concerned with what I give my child, you should know the whole story before you give your opinion. My child is one of the healthiest kids I know or ever have known, and that's all my doing.

OK now onto something tasty...

I'm eating really light lately since summer weather is here. I wanted a pasta that had a lot of flavor and some protein. So I came up with a whole wheat pasta tossed in some sun-dried tomatoes, spinach, garlic, lemon, and Parmesan cheese. There's also a little cayenne pepper for a nice kick! Its a perfect summer pasta dish.

Preparing for Hell Week and Some Chicken Piccata...

Hope you all enjoyed the long weekend. I'm preparing both at home and mentally for the worst 20 days of my year, Hell week!

Hell week is usually referred to college students preparing for exams and papers or Navy Seals during their rigorous training. Anyone that works at a restaurant in Denver knows that the last week of February and first week of March is our Hell week, also know as Restaurant Week. Its basically two weeks of working everyday serving 1000's of people a day ( I kid you not, 1000's at one of my restaurants), working long grueling hours, its a roller coaster of emotion every year.

It hasn't even started yet and everyone I work with is ready for it to be over. For the next 20 days straight I will be juggling  two jobs, my kiddo, and will try to blog my usual two posts a week and try not to throw my hands up in the air and give up. If I don't make it, I'll see you on the flip side!

Liam has been under the weather lately and I wanted to make him something that I knew he would gobble right up. I make this Chicken Piccata at least once a month, we both love it so much. Its a great recipe that is wonderful to share with friends and pair with a glass of Santa Julia Torrontes.

Do you have any horror stories of working in restaurants?
